Jo Beth Guerra, MS, RD, LD, joined UNT Athletics as Assistant Director of Sports Nutrition in January 2026 and serves as Team Dietitian for Men’s and Women’s Basketball, Softball, Volleyball, Track and Field and Cross Country. She is passionate about purposeful fueling to improve athlete’s health and athletic performance.
Guerra came to UNT from University of Oklahoma where she worked with Women’s Basketball, Baseball, Women’s Soccer, Men’s Gymnastics and Track and Field. In her previous role at Oklahoma, she oversaw every aspect of fueling for practice and competition – including individual counseling, team education, cooking demos, organizing travels meals while on the road, and optimizing recovery through nutrition. Additionally, Guerra conducts body composition testing for numerous training cycles in collaboration with Strength and Conditioning staff to ensure athletes respond to training and stay on track with their goals.
During her time at Oklahoma, she fueled the Baseball team to a Regional appearance in 2023 and a regular season Big 12 Championship in 2024. She also supported the Women’s basketball team as a top 25 ranked program in 2026 season.
Prior to Oklahoma, Guerra served as a Sports Nutrition Fellow for the University of Arkansas from September of 2021 to July 2022. She was the dietitian for women’s gymnastics and assisted with football. Guerra also conducted body composition testing and analysis of results, performed individual nutrition counseling, team educations, menu planning, and hydration testing.
Prior to her time with Arkansas, Guerra served as the team dietitian for the Chicago Cubs minor league team in Myrtle Beach, South Carolina in 2021. Guerra focused on weight maintenance during the season and hydration testing to ensure the athletes stayed hydrated in the warm climate. She designed a purposeful fueling station to ensure athletes had access to real, nutritious foods along with menu planning and team education.
Before joining the Cubs, Guerra served as the fueling station manager at TCU from February 2019 to June 2020. She managed ordering, inventory and everything under the fueling and recovery umbrella.
Guerra earned a Bachelor of Science in nutrition and dietetics from Ouachita Baptist University and earned a Master of Science in nutrition and human performance from Logan University. Outside of work, Guerra enjoys staying active, getting outside, exploring local coffee shops and spending time with her son, Journey.
